Get ready to be blown away, you’ll be asking yourself – is this really “diet” food? This Keto Chocolate Lava Cake recipe is sure to cure any sweet tooth cravings. Top with some whipped cream and a few fresh berries for the delectable treat!

Preheat oven to 350°F.

In a small bowl, combine the monkfruit sweetener and cocoa powder and whisk well to remove the clumps.

In a different bowl, beat the eggs until they are a little fluffy (best done with an electric hand mixer).

Since your lava cake is flourless, you need the aeration of the well beaten egg to help coax the cake to rise.

Then add the eggs, heavy cream and vanilla extract to the dry mixture of monkfruit sweetener and cocoa. Add the Himalayan salt and baking powder as well.

Butter your Ramekins (or spray a little non-stick spray). Pour the chocolate batter into the ramekins.

Bake for about 10-15 minutes at 350° F. Do not overcook the lava cakes or the “lava” will not flow! The tops of the lava cakes should be set around the edges but slightly jiggly in the middle.

Serve up the lava cakes! Eat them straight out of the ramekins (I recommend this to prevent them from falling apart) or use a knife along the sides of the ramekins to help the lava cakes unstick. Eat it by itself, serve it up with some whipped cream and berries, or with a scoop of a low carb ice cream!

What I did: After using a knife along the sides, I flipped the ramekins over onto a plate and tapped the tops of the ramekins with the knife to help the lava cakes unstick. Mine stuck to the ramekins a bit but I was able to get it out and then served it with whipped cream, a few strawberries, and 5-6 blackberries. Yum!!
