
Keto Fried Cauliflower Rice

Keto Cauliflower Fried Rice is just possibly even better than the original!
Ingredients
- 4 cups CauliflowerGrated
- 1.5 tbsp Sesame Oil
- 2 Large eggs
- .5 cup Frozen Mixed VegetablesI use a mix of peas & carrots
- 2 Green OnionChopped
- 1.5 tbsp Minced Garlic
- 3 tbsp Soy Sauce
- Himalayan Salt
- Black Pepper

If you miss rice, this Keto Fried Cauliflower Rice is a must try! I have fallen in love with this Keto Fried Rice, I hope you enjoy it just as much. The soy and sesame oil really help disguise the cauliflower taste making it one of my favorite rice replacement recipes. It’s great alone or served with the Keto Asian Cashew Chicken recipe. You could even try adding chicken, beef, pork, or shrimp to this great Cauliflower Keto Fried Rice. It’s a family favorite in this household! In a small bowl, combine approximately 1 teaspoon of sesame oil with eggs. Whisk together and set aside. Using a cheese grater, grate the head of cauliflower. Measure out amount of grated cauliflower needed for this recipe as shown in the ingredient section of this page. Save any leftover for another use. Chop up the green onions. Heat remaining sesame oil in a wok or large nonstick skillet over high heat. Add the grated cauliflower, chopped green onions, and frozen mixed vegetables to the wok or pan and stir fry until the cauliflower begins to turn tender, approximately 4-5 minutes. Add the minced garlic and season with Himalayan salt and black pepper. Continue to stir fry until garlic is fragrant, approximately 1 minute. Push the Cauliflower Rice mixture to the sides of the wok or pan to create an opening in the center then add the eggs and scramble. Toss mixture to combine then drizzle in soy sauce (or Coconut Aminos!) and mix again to combine. Serve hot.
