
Keto Minestrone Soup

Ingredients
- 1 pack Italian Sausage Links (Mild)I used Johnsonville
- 1 tbsp Olive Oil
- .5 Yellow Onion
- 2 Carrots
- 8 oz White Button Mushrooms
- .5 Red Bell Pepper
- .5 Green Bell Pepper
- 4 Stalks Celery
- 1 Large Zucchini
- 4 Cups Baby Spinach
- 2 tbsp Minced Garlic
- 1 Bay Leaf
- 1 tsp Dried Oregano
- .5 tsp Red Pepper Flakes
- 2 quarts Chicken Stock
- 12 oz Marinara Sauce (No Added Sugar)
- 1.5 tbsp Soy Sauce
- 2 tbsp Fresh Basil
- Black Pepper
- Himalayan Salt
- Garnish Parmigiano Reggiano or Coastal White Cheddar Cheese
Directions
This soup is delectable, even without the noodles typically found in Minestrone! Enjoy this awesome Keto Minestrone Soup full of tasty veggies and sausage. Start off by peeling the onion and carrots and dice into ¼” to ½” pieces and set aside. Place a large Dutch oven or big soup pot over medium-high heat and add avocado or olive oil. When oil is heated well, add sausage and break up larger chunks of meat into smaller pieces with a wooden spoon. Stir in the onions and carrots. Continue to cook for 5 minutes, stirring occasionally. While the sausage mixture is cooking, clean the mushrooms, celery, and bell peppers. Slice the mushrooms and dice the celery and peppers into bite-size pieces, about ¼” to ½”. Stir the veggies into the sausage mixture and cook another 5 minutes. In the meantime, prep the zucchini and spinach: Clean and dice the zucchini into bite-size pieces. If using baby spinach, remove any long stems and set aside. For regular spinach, remove the stems, rinse thoroughly, and coarsely chop. Set zucchini and spinach aside. Stir in garlic, spices, chicken stock, marinara, and soy sauce into the pot. Increase heat to high and bring to a low boil. Reduce heat to low and simmer, uncovered, for 10 minutes. Add zucchini and spinach, and simmer for 5 more minutes. Add Himalayan Salt and Black Pepper to taste, if needed. Serve with freshly grated Parmigiano Reggiano or Coastal White Cheddar Cheese.
