Keto Sushi – Spicy Tuna Rolls
Mmmm Mmmm Good! No way...this has cauliflower?!
Who knew you could have Sushi on Keto? Enjoy this take on spicy tuna rolls!
- 1 cup Ahi Tuna
- 2 tbsp Mayonnaise
- 2 tsp Sriracha
- 2 tsp Lemon Juice
- 1 tsp Sesame Seed Oil
- 1 head Cauliflower
- 2 tbsp Soy Sauce
- 10 oz Cream Cheese
- 4 tbsp Rice Wine Vinegar
- 1 Cucumber
- 1 Avocado
- 4 Nori Wrappers
Gather & Prep
Gather your Ahi Tuna, Mayonnaise, Sriracha, Lemon Juice, and Sesame Seed Oil
In a small bowl or container, mix together the Mayonnaise, Sriracha, Lemon Juice, and Sesame Seed Oil.
Dice up the Ahi Tuna into small cubes.
Add tuna cubes into the spicy sauce, cover with lid or plastic wrap, and place in fridge while you prep the rest of the items needed for your spicy tuna rolls.
Prepare the Cauliflower Rice Mixture
Grate a head of Cauliflower.
Heat a large pan over medium-high heat. Once the pan is hot, add in the cauliflower and briefly stir for about 30 seconds.
Pour in the Soy Sauce and mix well.
Cook the cauliflower for 2-3 minutes or until cauliflower has little to no moisture from the soy sauce.
Turn off heat and move the cauliflower to a medium sized bowl or container.
Add the cream cheese and rice wine vinegar. Mix well.
Place the Cauliflower mixture in the fridge to allow it to cool down.
Cut up the Cucumber and Avocado
Once the Cauliflower mixture has cooled down, begin peeling the cucumber and slice it into thin long strips. Also, slice the avocado into strips.
Place some wax paper on top of a sushi bamboo roller.
Lay a sheet of nori down on the wax paper.
Spread a THIN layer of the cauliflower rice mixture over the nori sheet, leaving about 3/4 inches of space at the top.
Place the avocado, cucumber, and tuna in the middle of the cauliflower mixture as shown in picture.
