Keto Chocolate Lava Cake
Ooey gooey chocolatey keto cake!
Finally - a delicious guilt-free Keto Chocolate Lava Cake!
- 4 tbsp Unsweetened Cocoa Powder
- 1 tbsp Monkfruit SweetenerI use Lakanto Classic
- 2 Large eggs
- 2 tbsp Heavy Whipping Cream
- 1 tsp Vanilla Extract
- .5 tsp Baking Powder
- 2 Pinches Himalayan Salt
Bake and Serve!
Bake for about 10-15 minutes at 350° F. Do not overcook the lava cakes or the "lava" will not flow! The tops of the lava cakes should be set around the edges but jiggly in the middle.
Serve up the keto lava cakes! Eat them straight out of the ramekins or use a knife along the sides of the ramekins to help the lava cakes unstick. Eat it by itself, serve it up with some whipped cream and berries, or with a scoop of a low carb ice cream.
What I did: After using a knife along the sides, I flipped the ramekins over onto a plate and tapped the tops of the ramekins with the knife to help the lava cakes unstick. Mine stuck to the ramekins a bit but I was able to get it out and then served it with whipped cream, a few strawberries, and 5-6 blackberries. Yum!!
